I'm guessing that an identity theif would not be interested in stealing the identify of someone who has maxed out their credit cards and who is not likely to qualify for additional credit. I'm not an identity thief though, so I could be wrong.

I think you missed the point of the article. Casual dining is down at places that don't offer healthier options so people are exhibiting discipline and responsibility. The author is suggesting that restaurants need to provide healthier options to woo back these people.
I don't think this article is suggesting restaurants give up serving their gut bombs, but rather they add some healthier options to their mix.
